… what is Verjus?
Verjus is a delicate, tangy juice made from unripe green grapes. Its flavor is mild, fruity, and elegant – with a pleasantly soft acidity. The color ranges from pale green to a warm golden hue.
Our very first Verjus, made from 100% Blaufränkisch grapes, was harvested at the end of July. Each grape was carefully hand-picked and then gently crushed by foot – a real labor of love that paid off. The yield was small, just 300 liters, but the taste is all the more special: concentrated, balanced, and truly unique.
Verjus contains natural polyphenols – valuable plant compounds with antioxidant properties. These help neutralize free radicals, support cell protection, and contribute to a healthy immune system. They may also have anti-inflammatory effects. In addition, Verjus provides vitamin C, potassium, magnesium, and small amounts of vitamin B6.
